Canadian Bacon
While eggs are poaching, toast muffins. Have cooked spinach, warmed Canadian bacon, and Hollandaise sauce ready.
Butter each muffin half, top with one slice of bacon, cooked spinach, and a poached egg.
Spoon warm Hollandaise over eggs.
